Tuesday Dinner

Chicken with grilled Gala apples and Spinach
4 boneless chicken breast
2 medium onions, sliced
3 gala apples. cut into wedges
1 bag of spinach
2 tbs of balsamic vinegar
2 oz blue cheese, broken into pieces
olive oil
coriander
cracked pepper and sea salt

Directions:
Step 1: Heat up the grill to medium-high. Season the chicken breast with some pepper, salt and the coriander. In a large bowl, toss the onions, apples, 1 tablespoon of olive oil, salt and pepper.
Step 2: Grill the chicken breast and the onions until the chicken is cooked through and the onions are tender. Grill the apples until charred.
Step 3: Slice up the chicken breast. Toss the spinach with the onions, apples, vinegar, and some olive oil. Top with the blue cheese.
